Domaine François Chidaine is located in Montlouis-sur-Loire , in the Loire Valley . The vineyard covers 37 hectares; 20 hectares of Montlouis and 10 hectares of Vouvray . The vines are divided into around fifty plots which have been organically grown since 1992 and certified biodynamic since 1999. The remaining 7 hectares produce wines under the Touraine appellation. Looking to the future, François Chidaine began an adventure in Murcia, a province in southern Spain in 2010, where he produces a white wine and a red wine made from local grape varieties.
Les Bournais is made from Chenin Blanc harvested manually in Montlouis-sur-Loire with successive sorting, on a 4-hectare plot whose age of the vines varies from 5 to 21 years. After pressing in a pneumatic press, the alcoholic fermentation is carried out by indigenous yeasts in 600-litre demi-muids. It can last up to 6 months. Malolactic fermentation is not sought. The aging lasts 11 months , in demi-muids and on fine lees . The wine is bottled with 0.9 g/L of residual sugars.

Fremdeles en lys farge, saltaktig, men denne også med et stikk av batterisyre. Noe mere sødme i munnen, men det blir litt motsetninger i ubalanse. 84 poeng

Gylden lys cognac farge. Uren kjellernote med innslag av botrytis. Lett oksidativ med tørket frukt. Vi hadde denne også på BYO Centropa. 85 poeng
